A farmer's son from the southwest, Marc Seignard learned from an early age about the merits of good recipes and fresh ingredients. As his mother cooked for a large family, the future chef discovered the flavours of traditional cuisine and was drawn towards his future vocation. Graduating a few years later from the Souillac hotel school, he began his career at the Auberge d'Armaillé in Issy-les-Moulineaux, before moving on to the Dessirier restaurant in the place Pereire in Paris.
In the kitchens of the restaurants Les Pieds dans l'Eau (Neuilly) and Voltaire (La Garenne-Colombes); at the head of his own restaurant, Le Pitchounet (Colombes) and then within the Group Flo chain, where he worked in Petits Bofinger, Marc Seignard created, season after season, simple and delicious dishes that placed the spotlight on quality ingredients and homemade recipes.
In 2010, charmed by his generous and refined approach to cuisine, Catherine and Philippe Bracon entrusted Marc with creating the menus of their two fine establishments, Le Village at Neuilly and the Brasserie du Théâtre in Saint-Germain-en-Laye. Today, after more than 25 years of delighting gourmets, Marc Seignard has chosen to follow the Bracons in their new venture, Le Petit Médicis. Here he works with his fellow chef, Thierry Cormier, and still demonstrates an undiminished ambition to celebrate traditional cuisine while providing an irresistible touch of modernity!
